Is it worth creating a team or just stick to one Mon, as I’m just left trainer school and it takes way to long to grind

Well, it’s a balance of quickly grinding and overall strength of the team. Some people like to have up to 4 Pokémon in their party, others want a 6 as quickly as possible. In Insurgence, you will inevitably need 6 Pokémon in your team at some point. Take your time.
