I have recently receive my mega ring and eevite and on the official Insurgence wiki it specifies moves that mega evolve Eevee into its eevolutions. Do I have to use those specific moves or just the move type?

if you teach eevee a fire move, it will transform into flareon etc… https://wiki.p-insurgence.com/Protean_Maxima_(Ability)
it doesnt work like that, it must know one of its tutor moves (moves it learns by the move tutor in helios city and gaea town, an old lady teaches it). if it knows that move, it cannot evolve, but it can transform into one of its other forms. so no, it wont become a sylveon if it uses baby doll eye
