I’m trying to EV train my Blastoise and did about 30 battles on Special Attack with the EV trainer and when I next levelled up with Blastoise my Special Attack only went up by 2 and the EV’s shown on it’s summary page remained unchanged. This is the first time I’ve played a Pokemon game enough to learn about EV’s, but is this not how you gain EV’s? should the 7 points from 30 Special attack battles now have applied on the next level up?

As far as I can tell, the stats that appear in the level up page are the correct ones as special moves are 1 shotting enemies they couldn’t after I did the EV training.
You can only have 510 EV points distributed between stats, with the maximum in a single stat being 255. Since EVs take effect in groups of 4, that means 508 with the max in a stat being 252.
You’ve got a wide spread there, so you don’t have any more room in special attack EVs.
You’d need to use Stat-Reducing Berries, which you can get in Helios Department Store, or talk to the EV resetting NPC in a secret base- the old lady who wears green. Then you will free up more of those points for the EVs you want.

Your Delta Blastoise has 120 HP evs, 96 ATK evs, 52 DEF evs, 95 SP.ATK evs, 65 SP.DEF evs and 82 SPD evs. This makes a total of 510 Total EVs. As 510 is the maximum amount of EVs you can have on 1 Pokemon, you will not gain anymore EVs.
Besides this fact, as already explained, 4 EVs gives you +1 ( multiplied by your Level/100 ) in a single stat.

I see, I thought the EV numbers were the EV’s themselves not the stats that come from them.
